ORZO SALAD Ingredients:
    12 ounce  orzo
    2 tablespoon  plus ½ olive oil.
    1 ½ cup  crumbled feta cheese
    1 cup  chopped red pepper
    1 cup  chopped yellow pepper
    ¾ cup  pitted chopped kalamata olives
    4  green onions chopped
    2 tablespoons  drained capers
    ½ cup  chopped parsley
    1 cup  chopped sundried tomatoes
Dressing ingredients
    3 tablespoons  fresh lemon
    1 tablespoon  white wine vinegar
    1 tablespoon  minced garlic
    1 ½ teaspoon  dried oregano
    1 teaspoon  Dijon Mustard
    1 teaspoon  ground cumin

Directions:
Cook orzo in a large pot. Drain. Rinse with cold water. Transfer to large bowl. Toss with 2 tablespoons of olive oil. Add crumbled feta cheese, chopped peppers, olives, onions, and capers.
Combine dressing ingredients in a small bowl. Mix in ½ cup of olive oil.
Add dressing to orzo mixture and toss to blend. Season to taste with salt and pepper.
