Veggie Nuggets

Yield: 40-50 animal shaped nuggets

2 | Russet Potatoes, peeled & cut to 2" cubes |
2 Medium | Carrots, cut to 1" pieces |
1 C | broccoli florettes |
1/2 C | frozen corn, thawed |
1/2 tsp | Salt |
1/2 tsp | Garlic Powder |
1/2 tsp | Onion Powder |
1/4 C | Flour |
2 large | Eggs, whisked |
1 C | Bread crumbs |
Steam potatoes & carrots 15 min.
Add broccoli steam 5 more min.
Place carrots, broccoli & corn in food processor. Chop into tiny pieces.
Mash warm potatoes with hand masher.
Mix veggies & seasonings into potatoes.
Spread evenly onto sheet tray 1/2" thick
Freeze 30-60 min.
Use cookie cutters to press out shapes.
Lightly bread shapes by lightly coating in each flour, eggs then bread crumbs.
If desired freeze 30 min then bag for future use.
To cook, broil for 2 min each side.
Serve with Organic Ketchup.
