CAESAR - Caesar Spinach Salad Pasta

Caesar Salad Pasta Parade INGREDIENTS | |
1 box | whole wheat pasta |
½ Tbsp | butter |
1 clove | garlic |
3 Tbsp | lemon juice |
1 tsp | Worcestershire sauce |
1 Tbsp | dijon mustard |
1 tsp | red pepper flakes |
½ cup | Parmesan cheese, plus more for sprinkling |
2 anchovy filets | |
1 | egg yolk |
¼-½ cup | evoo |
½ cup | grape tomatoes, sliced |
3 cup | baby spinach |
DIRECTIONS
Bring large pot of lightly salted water to a boil and pour in pasta. Cook pasta for 8 to 12 minutes, until al dente, and drain. Return to pot and mix with ½ Tbsp butter.
While pasta is cooking, in a food processor, add 1 clove garlic, lemon juice, Worcestershire sauce, dijon mustard, red pepper flakes, ½ cup Parmesan cheese, anchovies, and egg yolk and blend together. While food processor is still running, slowly pour in ¼ cup of olive oil in. Blend well. Taste and add more olive oil if necessary, up to ½ cup.
Stir grape tomatoes and baby spinach into pasta. Drizzle Caesar dressing over the top and mix well.
Serve pasta in individual bowls with extra Parmesan cheese sprinkled on top.
