Easy V8® Bolognese Pasta Sauce

1/2 tbsp (7 mL) | olive oil |
1 ¼ lb (625 g) | lean ground beef |
1 cup (250 mL) | each, diced carrots and celery |
1/2 cup (125 mL) | diced onions |
1 tsp (5 mL) | chopped garlic |
1 tsp (5 mL) | coarsely ground black pepper |
1 tbsp (15 mL) | finely chopped fresh parsley |
2 cups (500 mL) V8 V-Plus® High Fibre Vegetable Cocktail 1 cup (250 mL) CAMPBELL'S® Ready to Use 25% Less Salt Beef Broth | |
1/2 can (156 mL size) | tomato paste |
1 tsp (5 mL) | salt |
6 portions | hot cooked linguine pasta |
Chopped fresh herbs for garnish |
Directions
1. Cook beef in heated oil in large skillet until golden brown. Add carrot, celery and onion and continue to cook for 5 minutes.
2. Stir in garlic, pepper, parsley, V8 V-Plus®, broth, tomato paste and salt.
3. Heat to a boil. Reduce heat to low and simmer for 45 minutes, stirring occasionally.
4. Serve immediately over pasta. Sprinkle with chopped fresh herbs, if desired.
