Janet's Pork Fried Rice

3/4 lbs cubes | pork, (country ribs) |

2 | eggs- beaten |
3 cups | Cooked rice |
3 | diced scallions |
1/2 | diced red & yellow pepper |
Pepper ground black | |
Dash | sesame oil |
Brown pork in oil in open non-stick skillet while rice is cooking in separate pot. Add egg & browned pork & scramble until egg is in tiny pieces. Add cooked rice and stir until oil is well mixed with rice. Add soy sauce a little at a time until rice is light brown. Keep mixing in soy (rice will turn darker as it sits). Add scallions & red pepper as well as black pepper to taste and a dash of sesame oil. Mix well and heat, stirring frequently for an additional 5 mins. If you want to mix in vegetables cook them first by blanching in boiling water. Than use slotted spoon to remove vegetables & put in ice water, then drain. This preserves the flavor, color & crispness. Add to rice before serving.
