Spinach or Broccoli Caserole

10 oz | frozen chopped spinach |
1 cup | pepperidge farm herbal stuffing-crushed |
1 medium | onion cubed |
2 | eggs, (egg beaters) |
1/4 cup | melted butter, (margarine) |
1/4 cup | grated Parmesan |
1 clove | minced fresh garlic |
1/2 tsp | pepper |
Cook spinach in pot or microwave & press water out (if using fresh spinach or broccoli, chop in food processor after cooking. Put eggs & onion in blender till frothy. Mix spinach with other ingredients, folding in egg onion mixture last. Bake in greased casserole dish for 20-45 mins at 350 degrees (depending on how thick). If no stuffing toast cubes of bread with herb seasoning or try using croutons. Reheats & freezes nicely.
