Buffalo "Scrambled Eggs"

Buffalo "Scrambled Eggs" Ingredients | |
1 package (350 g) | organic tofu, firm or soft |
4 tsp | Frank's RedHot Buffalo Wing Sauce or to taste |
1/8 tsp | turmeric |
1/8 tsp | salt |
Cooking spray, (I use Misto) |
Directions
Soft Tofu: Preheat large skillet on medium high heat, spray with cooking spray and add soft tofu. Break into small pieces with spatula and let cook until liquid evaporates. Add buffalo sauce, turmeric and salt, stir until "eggs" are yellow and cook for 2 more minutes.
Firm Tofu: Cut firm tofu into blocks and crumble with your hands into a small bowl. Preheat large skillet on medium high heat, spray with cooking spray and add crumbled tofu. Cook for 2 minutes, stirring once, and add buffalo sauce, turmeric and salt. Stir until "eggs" are yellow and cook for 2 more minutes.
Storage Instructions: Refrigerate covered for up to 2 days.
