Strawberry Cream Cheese Muffins

1 cup | flour |
1 cup | white whole wheat flour |
1/2 cup | sugar |
2 tbsp | baking powder |
1/4 tsp | salt |
1 cup | milk |
1/4 cup | canola oil |
1 | egg, whisked |
1 cup | strawberries, chopped |
Filling: | |
4 oz | cream cheese, room temp |
1/3 cup | sugar |
1/2 tsp | vanilla |
Preheat oven to 375. Spray muffin tin with cooking spray.
Whisk flours, sugar, baking powder and salt in large bowl. Make a well in the center and add milk, canola oil and egg. Whisk and then fold the mixture gently together. Add strawberries and fold in. Set aside.
Whisk cream cheese, sugar and vanilla together.
Put 2 tbsp of batter in each muffin tin. Add 1 scant tbsp cream cheese to each, gently pressing in batter. Top each with remaining batter, about a scant tbsp.
Bake 23-25 mins.
