Cauliflower-Alt-Fried Rice

Ingredients | |
2 Cups | Frozen Peas |
1/2 Cup | water |
1/4 | Sesame Oil |
4 Cups | cubed Pork loin, (can be substituted) |
6 | Scallions sliced |
1 large | Carrot cubed |
2 Cloves | Garlic minced |
20 oz. | Cauliflower, (can be substituted) |
6 Tbsn of Soy Sauce (may substitute with Lite Soy Sauce) | |
2 | Eggs beaten |
Directions
1. Stir Peas and water in a sauce pan and bring to a boil. Reduce heat to medium low. Cook until Peas are tender aprox. 5 min. Drain and discard water.
2. Heat two Tbsn. of Seame oil in wok over medium Hi heat. Cook and stir Pork until light brown aprox. 7-10 min. set aside.
3. Heat remaining Sesame oil in the wok. Sauté Scallions, Carrot, and Garlic in hot oil until just soften aprox. 5 min. Add Cauliflower until tender aprox. 4-5 min.
4. Stir Pork into Cauliflower mixture until slightly brown aprox. 3-5 min.
5. Move Prk/Cauliflower to one side of the wok. Poor beaten eggs to empty side of wok and scramble Eggs until cooked aprox. 3 min. Stir into Pork/Cauliflower mixture add Peas and Carrot mixture. and serve.
Alternatives
1. Instead of Cauliflower can be Quinoa or Couscous
2. Instead of Pork any meat
