Sunshine Pancakes

    2.25 cups  whole wheat flour, Hard White
    1.25 teaspoon  salt
    1.25 teaspoon  baking powder
    .25 teaspoon  baking soda
    .25 teaspoon  cinnamon
    3  eggs, beaten
    1/3 cup  oil
    .25 cup  honey
    1 teaspoon  vanilla extract
    2.5 cups  buttermilk

1. Combine dry ingredients in bowl (2-qt)
2. Combine liquids in separate container
3. Add liquids to drys and beat until smooth
4. Portion onto preheated skillet, .25 cup per pancake
5. Cook until surface of pancake is full of bubbles and golden brown
6. Flip pancakes and finish cooking

Tip: Measure oil in measuring cup. Pour this oil into separate measuring cup for honey and then pour oil into liquids. There should be a little oil left over in the honey cup. Pour honey into its measuring cup. When honey is poured out the thin film of oil will cause the honey to have minimal sticking in the cup.
