Louisiana Creole Sauce |
Heat oil in large skillet, add onions, green pepper, & celery & sauté' until onion is transparent. Add mushrooms, parsley, & garlic, & cook until mushrooms are tender. Add stock, tomato paste, tomatoes, salt, & pepper. Crush the tomatoes with the side of a spoon and stir until all ingredients are well combined. Add crushed red pepper & stir. Pour contents of skillet into a 3 - quart casserole. Bake in convection oven on rack position 2 at 350 degree for 45 minutes, stirring once or twice. Serve with meat loaf or fish.

Nice to know: this sauce freezes very well. Use half & freeze the remainder to use at another time.
Note: you can put the Louisiana creole sauce into the oven when the meat loaf goes in; cover it loosely with foil until the oven temperature is reduced to 350 degrees.
