Creamy Roasted Garlic Hummus

2 cups | chickpeas |
2 tbsp | tahini |
4 tbsp | olive oil |
1/4 cup | warm water |
1 large head | garlic |
1 | lemon, juice of |
1/4 tsp | sea salt |
Preheat oven to 375 and cut off very top of garlic head so that the tops of most of the cloves are exposed. Coat with a little olive oil and wrap in foil. Roast for 1 hour. Remove and allow to cool.
Remove garlic from cloves and put in food processor. Rinse and drain chickpeas. Add chickpeas and all other ingredients to food processor. Blend until smooth.
If hummus is too thick, can add olive oil slowly a little at a time.
Sprinkle with paprika or parsley.
