    1 1/2 cups  sugar 1/2 cup oil
4 eggs 8 oz. can crushed pineapple Mix together. Add:
    2 cups  flour 2 tsps. soda
    2 tsps.  cinnamon 3 cups raw grated carrots
    1 tsp.  salt 1/2 cup nuts, ( I use pecans)
Bake at 350 degrees in a 9 X 13 pan or fill muffin tins. Bake 30 minutes. Icing:
    2 cups  powdered sugar 2 tsps. vanilla
    3 oz.  cream cheese 1/2 cup nuts
    3/4 (6 Tbsps.) stick  butter
