1 lb (500 g) | extra lean ground beef |
1 pkg Old El Paso* Smart Fiesta* Hard Taco Dinner Kit | |
1 can (398 mL) | no salt added tomato sauce |
1 small | red pepper, chopped |
1 can (12floz/341 mL) Green Giant* Niblets* Whole Kernel Corn, drained | |
1/2 cup (125 mL) | sliced ripe olives |
1 cup (250 mL) | thinly sliced romaine lettuce |
1/4 cup (50 mL) | shredded reduced fat Monterey Jack cheese |
1/4 cup (50 mL) | shredded reduced fat old Cheddar cheese |
Method:
Heat oven to 350ºF. In large skillet, cook ground beef over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain if necessary.
Meanwhile, heat taco shells as directed on box.
Stir tomato sauce, pepper and corn into ground beef. Cook 2 to 3 minutes longer, stirring occasionally, until mixture is hot and bubbly.
Spoon about 1/3 cup beef mixture into each warm taco shell; top with olives, lettuce and cheese.
