1/3 cup | dark or light brown sugar |
1 tablespoon | baking powder |
1/4 teaspoon | salt |
1/2 cup | pecans, chopped |
1/2 cup | melted butter |
3/4 cup | regular or low-fat milk |
2 tablespoons | quality instant coffee powder |
1 teaspoon | vanilla extract |
1 medium | egg |
1/8 cup | dark or light brown sugar |
2 tablespoons | pecans, chopped |
Directions
Preheat oven to 375 degrees. Lightly spray 10 muffin cups with cooking oil. Combine the flour, brown sugar, baking powder, salt and 1/2 cup of the chopped pecans in a large bowl. Slowly mix in the melted butter, milk, coffee, vanilla and egg. Mix thoroughly to combine all ingredients. Fill each muffin cup two-thirds full. Mix the rest of the ingredients together to make a crumble and sprinkle on top. Bake for 18-20 minutes. Test by inserting a toothpick in the center. If it comes out clean, the muffins are done.
