OREOS - Oreo Mint Cupcakes

Cake: 20-24 mint oreos | |
1 box | devil's food cake mix |
3 | eggs |
1/2 cup | oil |
1 cup | buttermilk |
1/2 cup | sour cream |
2 tsp | vanilla |
Frosting: | |
1/2 cup | butter, softened |
8 oz | cream cheese |
1 1/2 tsp | peppermint extract |
1 tbsp | milk |
3-4 cups | powdered sugar |
Green food dye
6 mint oreos, finely crushed
Preheat oven to 350. Line pans with cupcake liners.
Place an oreo at the bottom of each liner.
Sift cake mix in small bowl and set aside.
In a large bowl, combine eggs, oil, buttermilk, sour cream and vanilla until smooth. Stir in cake mix.
Fill cupcake liners 3/4 full and bake for 15-20 mins. Bake on center rack.
Frosting: Beat butter and cream cheese for 2 mins. Add peppermint extract, milk and slowly add in powdered sugar until reach desired consistency. Add green food dye and crushed oreos and stir. Do not overmix. Frost cupcakes.
