Sugar-Free Chocolate Pudding Serves 4 | Serving Size: 1/2 cup Total Time: 5 min | Prep: 5 min | Cook: 0 min This chocolatey, creamy pudding is an excellent source of protein and tastes like chocolate mousse. Ingredients:
    12 ounce  package silken tofu
    1/3 cup  skim milk
      soy milk, alternative
    1/3 cup  Splenda
    1/2 teaspoon  vanilla extract
    1/4 cup  cocoa powder
Directions: Place all ingredients in food processor. Blend on high speed, scraping bowl, until smooth. Divide mixture into 4 small dessert dishes and refrigerate until ready to serve. Optional toppings:
      fat-free whipped cream
      fresh fruit
      chocolate chips

Chef's Tips:
