    8 oz  finely shredded sharp cheddar cheese
    1/2 c  butter, softened
    1 1/2 c  all purpose flour
    1 T  sugar
    1/2 t  salt
    1/4 t  cayenne
    1 T  water

Combine cheese and butter in food processor, pulsing until well blended.

Add flour,sugar, salt and cayenne; pulse several times until well mixed. Add water and pulse until mixture comes together and dough forms.

Turn dough onto a clean surface and knead until smooth. Form into a ball, divide in half and shape into 2 8" logs. Wrap in plastic wrap and chill 2 hours to 3 days.

Heat oven to 375 degrees. Spray 2 baking sheets with cooking spray. Slice logs into 1/4 disks and place on baking sheet. Prick with skewer a few times.

Bake 12-14 minutes until just golden brown on edges.
