Sweet Potato Soup

2 tbsp | olive oil. 2 cups cooked lentils |
1 onion diced. 1 tbsp chili powder 2 bell peppers. 1 tbsp cumin | |
3 | sweet potatoes, ( peeled & diced). 1 tbsp paprika |
3 cloves | garlic, minced 1/4teaspoon cayenne pepper |
4 cups | vegetable broth. Ground pepper& salt to taste |
2 cans (10 ounces each) | diced tomatoes. Greek yogurt for serving |

Heat olive oil in Dutch oven over medium heat. Add onion and bell peppers and cook,stirring occasionally ,until tender, about 3-5 min. Add sweet potatoes
And garlic and cook until potatoes begin to soften,about 5-7 min. Stir in vegetable broth,diced tomatoes,lentils,and all other ingredients.bring to boil,reduce heat and simmer until thickened about 30 min. Remove about 4 cups to a blender and purée until smooth. Stir back into the chili.repeat if you prefer consistency
