Beet root dip

2 medium | beets peeled and halved |
1 cup | cooked chickpeas |
1 garlic clove peeled and sliced | |
2 tbsp | olive oil |
1 tsp | salt |
1/2 tsp | ground coriander |
1/2 tsp | ground cumin |
1/2 tsp | lemon zest |
1 tbsp | lemon juice |
1 tbsp | sesame paste |
Pepper to taste |
Toasted sesame seeds as garnish
Parsley chopped as garnish
1. Place steamer basket in small saucepan. Fill with water. Add beets. Steam until tender 10-15. Remove and cool. Grate beets and add to food processor with rest of ingredients. Add water if to thick and season to task with salt and pepper and lemon juice. Garnish with sesame seeds and serve with favorited crackers, cheese and olives
