Sundried Tomato & Arthichoke Soup

3 T | olive oil. 2 c roasted chopped potatoes |
2 chopped whi te onions. 5 c stock 3 chopped ribs of celery. 1 small can tomato paste | |
1 c | sun dried tomatoes. 3-13 oz cans chopped artichokes |
3 T | finely chopped garlic |
1/2 c | basil finely chopped |
1small | fennel bulb chopped |
2 T | dry thyme |
Heat olive, add ingredients from column one. Cook covered, stir occasionally until veg are soft, about 10 minutes.
Add roasted potatoes, stock, tomato pasted and artichokes. Simmer about 10 minutes. Blend until smooth in a food processor and strain before serving.
Serves six
