Tzatziki
    2 - Cups  Yogurt
2 - medium cucumbers-unpeeled
    1/2 tsp.  sea salt
    6 cloves  Garlic, chilled and minced
    2 T.  Olive Oil
    2 T.  Finely chopped fresh dill
    Pinch  Pepper

Method

Line strainer with rinsed cheesecloth or paper towel. Spoon in yogurt and let drain several hours or overnight. Transfer to bowl. Meanwhile, peel and seed cucumbers. Chop and toss with Salt. Let drain in sieve at room temperature for about 30 minutes.
Pat dry and add to Yogurt along with garlic, oil and Parsley. Add pepper to taste. Chill 1 hour before serving. Makes 3 cups.
