Chicken Gumbo

| 3/4 cup | flour |
| 3/4 cup | oil |
| 3 cups | chopped onion,, (3 large onions) |
| 1 1/2 cups | chopped celery,, (1 stalk celery) |
| 1 cup | chopped green peppers |
| 3 cloves | garlic |
| 3 lbs. | okra,, (1 lb.) |
| 1 16 oz.can | tomatoes |
| 1 tsp. | thyme,, (too much thyme) |
| 1 tsp. | basil |
| 3 | bay leaves |
| 1/4 cup | parsley |
| Salt | |
| pepper to taste | |
| 1 hen or large fryer cooked - broth saved Tobacco and Lea & Perrins to taste | |
| 1# | sausage |
Make roux. Add vegetables and cook until tender. Add broth and shredded chicken. Slice sausage and add to pot. Simmer until done.
