Roast Prime Rib (Kari Boyd's Recipe)

Rub Ingredients | |
1 tablespoon | ground mustard |
1 1/2 teaspoon | salt |
1/2 teaspoon | paprika |
1/4 teaspoon | ground allspice |
1/4 teaspoon | pepper |
5 lb | boneless beef rib roast |
1 medium | onion, thinly sliced |
3-5 cloves | garlic, peeled and sliced |
melted butter | |
olive oil, alternative |
1. cut back fat flap on roast and cut 1/2 inch deep slits into the meat. Rub ends of roast with butter and also top of flap. Rub spice mix into cuts and on ends of roast. Lay garlic into slits and lay onions on top. Close the flap over the onions and tie with meat string.
2. cook at 450 degrees for 15 minutes, then turn heat down to 325 degrees and bake until meat thermometer reads 130 degrees (for medium rare) (about 1 hour). Once hits desired temp, remove from oven and let stand for 25 minutes before cutting the meat to allow juices to release.
3. Cut and enjoy!
