MEATBALLS - GROUND PORK - Italian Sausage Meatballs

| Italian Sausage Meatballs Parade | |
| 1 lb | fresh, (raw) hot Italian sausage, casings removed |
| ½ lb | fresh, (raw) sweet Italian sausage, casings removed |
| 1 cup | grated Pecorino cheese |
| ½ cup | plain dry bread crumbs |
| 1 large | beaten egg |
| ¾ cup | chopped flat-leaf parsley |
| 2 minced peperoncini | |
| 1 Tbsp | tomato paste |
| ¼ tsp | kosher salt |
To make meatballs: Preheat oven to 425°F. Combine all ingredients (from 1 recipe above) in a bowl and mix gently with your hands until just blended. Roll into golf ball–size rounds and roast on parchment-lined baking sheets until cooked through and golden, 20 to 25 minutes.
