Eggnog Bread

2 | eggs |
1 1/2 Cups | Eggnog, not low-fat |
1 cup | sugar |
1 1/2 tsp | rum extract |
1/2 cup | softened butter |
2 1/4 cups | flour |
1 pkg. (3.4oz) | instant vanilla pudding |
2 tsps | baking powder |
1/2 tsp | salt |
nutmeg | |
Rum Glaze: | |
1 cup | powdered sugar- 2-3 tsp eggnog, 2 TB rum extract - 1/2 tsp nutmeg |
Mix all wet ingredients. Add dry ingredients and mix thoroughly. Do not over mix. Pour into mini loaf pans (batter will be thick) Bake for about 22-30 minutes or until middle test done.
Cool in pan for 5 minutes and cool remove, cool on racks. When cool, mix glaze and drizzle over loaves.
