1 env. | taco seasoning mix |
1 can | refried beans, (1 lb.) |
1 can | tomato sauce, (8 oz.) |
1 c. | coarsely crumbled tortilla chips, (any flavor) |
1/2 c. | shredded cheddar cheese, (or more) |
1 package | frozen corn |
1 can | olives, sliced |
Cook ground beef over moderately high heat until lightly browned, stirring occasionally. Add seasoning mix, beans, corn, olives and tomato sauce; stir to combine. Leave over heat until mixture comes to a boil, stirring frequently.
Pour meat mixture into a deep 2 quart casserole dish. Sprinkle crumbled tortilla chips around the top edge of meat mixture; sprinkle cheese over chips. Bake in a 375 degree oven for 20 minutes or until cheese is melted. Serves 4-6.
