Preheat oven to 350 degrees. Combine garlic, oregano, salt, sage, and 1 Tbsp. canola oil in a small bowl and set aside. Rub bottom of roast with a drizzle of oil. Place in a roasting pan that has sides. Surround roast with cut green beans. Drizzle remaining canola oil over green beans and salt to taste. Cut butter into smaller pieces and place on green beans. Rub the spice mixture over the top of the roast. Cover pan with aluminum foil. Cook for 1 hour 20 minutes. Remove foil after about 50 minutes. Roast is ready when the middle reaches 160 degrees. Let stand 10-15 minutes.
My note: if using convection roast, decrease time by 30% but keep covered with foil until the last 10-15 min otherwise beans will be overdone.
