Cuban-Style Pork Sliders

Just a bit of garlic, cumin, and citrus makes a delicious marinade for light and lean pork. Try using whole-wheat rolls to boost the fiber intake of these tasty mini sandwiches. 4 lb | boneless pork shoulder, trimmed of fat |
6 lg cloves | garlic, minced |
2 tsp | cumin |
2 tsp | dried oregano |
1/2 c | fresh lime juice |
1/2 c | fresh orange juice |
12 slices | low-fat Swiss, (about 1/2 lb), halved |
24 slider rolls | |
3/4 lb | sliced low-sodium deli ham |
48 dill pickle slices | |
12 tsp | mustard |
1. Put pork in lightly oiled slow cooker pot. Sprinkle with half of the garlic, cumin, and oregano. Mix remaining garlic, cumin, and oregano with citrus juices and pour into pot.
2. Cover and cook on low 4 to 5 hours or until pork is fork-tender and cooked through. Transfer to cutting board and break into pieces. Skim fat from pot and reserve juices.
3. Divide cheese among tops of rolls and broil until melted. Layer bottoms of rolls with ham and pork and drizzle with juices. Top each with pickles, mustard, and tops of rolls.
