Al Fresco Pasta with Apples

Ingredients: | |
1 pound | short noodles like macaroni or gemelli |
4 tablespoons | extra virgin olive oil |
1 small | onion |
12 oz | sweet-apple chicken sausage |
2 | apples |
2 teaspoons | garlic |
red chili pepper flakes to taste | |
half a | potato |
6 ounces | spinach |
1 cup | chicken broth |
1/2 cup | water |
1/2 cup | cheddar |
parmesan cheese, alternative | |
salt | |
pepper |
Directions:
1. Cook pasta in a large pot.
2. Heat the olive oil in a large skillet. Add the onion, sausage, and potatoes until brown. Add the apple, garlic, and red chili pepper flakes and cook until the apple is tender.
3. Add the chicken broth, spinach, and water and cook until the spinach is wilted.
4. Mix with the pasta and then add whatever kind of cheese you want. Add salt and pepper to taste.
