Red Onion, Tomato & Herb Salad

Large hand full coarsely chopped fresh herbs For the dressing: | |
2-4 Tbsp | vegetable oil |
2 Tbsp | red wine vinegar or fruit vinegar |
Arrange the tomato slices in a shallow bowl. Sprinkle with sugar, salt and pepper. Separate the onion slices into rings and sprinkle them over the tomatoes. Sprinkle the herb over the top. Any fresh herbs that are in season can be used, for example, tarragon, sorrel, cilantro or basil.
Place the dressing ingredients in a jar with a screw top lid. Shake well. Pour the dressing over the salad and mix gently. Cover with plastic wrap and chill for 20 minutes. Remove the salad from the refrigerator 5 minutes before serving.
