Carrot sunflower apricot muffins

1 1/3 cups | whole wheat flour |
2/3 cup | sugar |
1 1/3 teaspoons | baking soda |
2/3 tablespoon | cinnamon |
1 1/3 cups | grated carrots |
1/4 cup | dried apricot, chopped |
1/4 cup | sunflower seeds |
1/4 cup | chocolate chips |
1/4 cup | shredded coconut |
2/3 | banana, mashed |
2 | eggs |
2/3 cup | oil |
1 1/3 teaspoons | vanilla |
Directions:

Combine flour, sugar, baking soda and cinnamon, and mix well. Stir in carrots, apricots, sunflower seeds, chocolate chips, coconut and banana.

Beat together eggs, oil and vanilla. Stir into flour mixture just until moistened. Spoon into greased muffin tins and bake at 375*F (190*C) for 15 to 20 minutes.
