Blackberry and apple loaf

250/9oz | self raising flour |
175/6oz | butter |
175/6oz | light muscovado sugar |
Half tsp | cinnamon |
2 rounded tbs Demerara sugar | |
1 small | eating apple |
2 large | eggs |
Zest of 1 | orange |
1 tsp | baking powder |
225/8oz | blackberries |
Preheat oven to 180c/4 gas
Butter and line 1.7 litre
Rub flour, butter,and sugar together to make crumbs.
Measure 5 level tbs of this mixture in a small bowl.
Add cinnamon and dem sugar. Set aside grate apple and mix in the eggs and zest. Stir in egg mixture until it drops from spoon.
Gently fold in three quarters of berries with metal spoon.
Spoon into tin and level. Scatter rest of berries on top. Sprinkle with topping and bake 1 and a quarter. Check after 50 mins and cover loosely with foil if browning too much
