Omelette au brocciu de corse

| 8 œufs extra frais 250 de brocciu | |

Lavez et ciselez la menthe. Battez les œufs. Incorporez le brocciu écrasé grossièrement, selon le goût. Ajoutez le sel, le poivre et la menthe.
Versez le tout dans une poêle préalablement chauffe avec de l huile d olive. Faites cuire à feu moyen. Servez l omelette un peu baveuse mais bien dorée.
