maple-roasted sweet potato wedges

2 1/2 lbs | sweet potatoes, peeled and cut into wedges |
2 tbsp | olive oil |
3 tbsp | maple syrup |
1 tbsp | fresh lime juice |
1/4 - 1/2 tsp | red-pepper flakes, (optional) |
heat oven 450 F
toss sweet potatoes with oil and 1/2 tsp salt & pepper
roast for 25 minutes
flip potatoes and continue roasting for 8 minutes
whisk together maple syrup, lime juice, red-pepper flakes
drizzle over potatoes and toss to coat
bake until syrup forms a glaze (2-3 min)
