3/4 cup and 2 tablespoons oil, 3/4 cup and 2 tablespoons chopped onion, 10 1/2 cups uncooked white rice, 14 cups chicken broth, 7cups chunky salsa. |
Heat oil in large heavy skillet over medium heat. Stir in onion, cook till tender bout 5 min. Mix rice into skillet, stir often when rice begins to brown stir in chicken broth and salsa. Reduce heat cover and simmer 20 min until liquid has been absorbed.
