Monaghan's 5 Star Shiitake Mushroom Soup

12 Garlic Cloves Minced | |
1 Large | White Onion Minced |
1 Pound | Carrots Minced |
2-1/2 sticks | butter |
3 Pounds | Button Mushrooms |
1 Pound | SHIITAKE Mushrooms |
3 (49.5 OZ) cans | Chicken Stock |
2 (49.5oz) cans | Beef Stock |
16 Tablespoons | Flour |
4 cups | Cream |
1 Tablespoon | Salt, (salt to taste) |
1 Tablespoon | Pepper, (Pepper to taste) |
1 Teaspoon | Cayenne |
X Tablespoons of Sherry
X Sprigs of Thyme
Sauté in large cooking pot: Onions, garlic, carrots, and butter for about 15-20 minutes (variable to recipe size)
Add Mushrooms and cook down for about another 15 minutes.
Add Flour in 4 Tablespoon increments and mix well and let thicken for 5 minutes
Add Beef and Chicken Stock
Add Salt, Pepper, and Cayenne
Bring to a boil and then Simmer for 30 Minutes
