Chocolate chip oatmeal cookies

Ingredients: | |
1 C. | butter, (room temperature) |
1 C. | light brown sugar |
1/2 C. | granulated sugar |
1 Lg. | egg |
1 Lg. | egg yolk |
1 Tbs. | vanilla |
2 C | All purpose flour |
1 C. | quick cooking or old fashioned oats |
1 tsp. | baking powder |
1 tsp. | baking soda |
3/4 tsp. | salt |
2 C. | semisweet chocolate chips |
Directions:
Preheat oven to 325*. Line cookie sheets with parchment paper.
Beat butter & sugars, then beat in the egg, egg yolk and vanilla. Add
remaining ingredients (except chocolate chips), mixing until thoroughly incorporated, scraping sides and bottom if bowl as needed.
Stir in chips. Scoop 1 1/2" balls of dough on to lightly greased parchment lined cookie sheets, leaving 2" between them. Bake until lightly golden brown with slightly darker edges about 12-15 minutes.
Let cool on cookie sheet until firm enough to handle. Remove to cooling rack. Enjoy!
