Lexi's Turkey Pot Pie

1 medium | onion, diced |
2 medium sized | baked potatoes diced |
3 | carrots, peeled and diced |
3 | celery stalk, diced |
2 large | garlic cloves, minced |
1 cup | frozen peas, (thawed and patted dry) |
½ cup | whole wheat flour |
2 cups | chicken or turkey stock |
3/4 cup | beer, (I used an IPA) |
½ cup | whole milk |
2 teaspoons | chopped fresh thyme or 1 teaspoon dried |
2.5 cups | cooked turkey |

Topping | |
1 cups | whole wheat flour, (I used King Arthur’s white whole wheat organic flour) |
2 teaspoons | baking powder |
3 tablespoons | cold salted butter, cut into small pieces |
1 cup | milk, (any kind) |
1 tablespoon | butter melted |
1. Melt 2 tablespoons olive oil (or all olive oil in a medium pot over medium-low heat. Add onions, carrots, potatoes, celery and garlic; sauté on low heat until softened and slightly browned. Approximately 15 minutes.
2. Remove veggies to a large bowl and set aside.
3. Preheat oven to 375°
4. Melt the remaining 2 tablespoons of butter in the same pot over medium-low heat, and then add the flour. Stir constantly for about 2 minutes until mixture turns a blond color.
5. Slowly add the chicken or turkey stock in no more than 1/2 cup at a time, whisking after each addition to break up any lumps.
6. Whisk in beer, milk, and thyme. Cook, stirring frequently, for 10 minutes until the sauce is thickened.
7. While cooking sauce, mix together the topping. With either a blender or food processor combine all ingredients except the melted butter.
8. Add the veggie mixture, thawed peas, and turkey back into the pot and stir to cover with the sauce.
9. Pour into a 9X13 pan and cover with the topping mixture.
10 After baking for 15 minutes brush crust lightly with melted butter.
11. Bake 15 minutes more or until the crust is firm and golden. (about 30 minutes total baking time)
12. If you can let this cool 15-20 minutes before serving the filling will thicken nicely.
