    2  limes
    1/2 cup  coconut milk
    1 tbsp  fish sauce
    1 small  minced fresh chile, (or to taste)
    1/2 tsp  sugar, and lots of black pepper

    8 cups  romaine
    1  Carrot Chopped
    1  chopped bell pepper
    1  sliced avocado
    2  chopped tomatoes
    1 cup  chopped snow peas
      green beans, alternative
    2  chopped hard-boiled eggs, (or 2 cups chopped cooked chicken)
DIRECTIONS Combine juice of 2 limes, 1/2 cup coconut milk, 1 Tbsp fish sauce, 1 small minced fresh chile (or to taste), 1/2 tsp sugar, and lots of black pepper. Chop 8 cups romaine and put in bowl. Top with 1 chopped carrot, 1 chopped bell pepper, 1 sliced avocado, 2 chopped tomatoes, 1 cup chopped snow peas or green beans, and 2 chopped hard-boiled eggs (or 2 cups chopped cooked chicken).
