    1 1/2 C  flour
    1 TBS  baking powder
    1/2 tsp  baking soda
    1 1/2 tsp  pumpkin pie spice
    1 C  quick oats
    3/4 C  packed brown sugar
    1/2 C  raisins, 1/2 C walnuts or 1/4 C each
    1 large  egg, beaten
    1/3 C  vegetable oil
    3/4 C  milk
    1 C  solid packed canned pumpkin
1. Preheat oven to 400. Line 12-cup muffin tin with paper liners. Combine flour, baking powder, baking soda and pumpkin pie spice in a large bowl; then stir in oats, brown sugar and raisins. 2. In a medium bowl, combine eggs, oil, milk and pumpkin, blending well. Stir pumpkin mixture into dry ingredients until just moist. Fill muffin tins with batter and bake for 22-25 minutes until tips spring back when lightly touched. Each muffin: Calories 237 Protein 4g Carbs 35g
