Marbled cheesecake brownies

100 g | dark cooking chocolate, chopped |
125g | butter, chopped |
1/4 cup | cocoa powder |
1 cup | caster sugar, plus 1/2 cup extra |
3 | eggs, at room temperature |
1 cup | plain flour |
250g | cream cheese, at room temperature |
1 teaspoon | vanilla essence |
1. Preheat oven to 160/140 C fan forced. Grease and line a 30x20 cm, slice pan with baking paper, extending paper at long sides for handles.
2. Combine chocolate, butter and cocoa powder in a medium saucepan over low heat. Stir until chocolate melts and mixture is smooth. Remove from heat. Add 1 cup sugar and 2 of the eggs; stir until combined. Sift flour over chocolate mixture and stir.
Set aside.
3. Using electric mixer, beat cream cheese, extra sugar and vanilla in a medium bowl smooth and creamy. Add remaining egg and beat until well combined. Place large spoonful of chocolate mixture and cream cheese mixture in prepared pan, alternating mixtures. Using a round bladed knife, swirl mixture to marble.
4. Bake for 35-40 mins or until a skewer inserted at centre comes out clean. Remove from oven. Cool brownies in pan. Cut into squares. Serve.
