Simmer the vegetables, the broth and red wine, the chopped tomatoes. Add the Cumin to taste and any other seasoning you feel it needs. Pour this mixture over the browned meat. Mix it well and cover the dish with foil or pan lid. Place in the oven at 325 to 350 degrees for up to 2 hours til meat is almost fork tender. Add flour to a little water and mix well. Combine this And the chopped olives in the stew and bake uncovered about 30 minutes more until thick enough. Serve with you favorite taco condiments, cheese, pico de guiao, in flour tortillas. Warm tortillas in skillet.
