Slow Cooker Stuffing Cook Time: 4 Hours "Making this moist bread dressing in a slow cooker is an excellent way to free up the oven for other dishes on a busy cooking day." INGREDIENTS:
    1 cup  butter
      margarine, alternative
    2 cups  chopped onion
    2 cups  chopped celery
    1/4 cup  chopped fresh parsley
    12 ounces  sliced mushrooms
    12 cups  dry bread cubes
    1 teaspoon  poultry seasoning
    1 1/2 teaspoons  dried sage
    1 teaspoon  dried thyme
    1/2 teaspoon  dried marjoram
    1 1/2 teaspoons  salt
    1/2 teaspoon  ground black pepper
4 1/2 cups  chicken broth, or as needed (start w/2-3C. - don't want soggy
    2  eggs, beaten

DIRECTIONS:
1. Melt butter or margarine in a skillet over medium heat. Cook onion, celery, mushroom, and parsley in butter, stirring frequently.
2. a Spoon cooked vegetables over bread cubes in a very large mixing bowl. Season with poultry seasoning, sage, thyme, marjoram, and salt and pepper. (No need to add spices, except for salt & pepper, if using seasoned bread) Pour in enough broth to moisten, and mix in eggs. Transfer mixture to slow cooker, and cover.
3. Cook on High for 45 minutes, then reduce heat to Low, and cook for 4 hours.
As others have noted, DON'T ADD ALL 4-1/2 CUPS CHICKEN BROTH initially. While the recipe does read "pour in enough broth to moisten," it doesn't make it clear that the cook should be prepared to add broth as the slow cooker dries out the mixture over the cooking time. There was a full two cups of leftover chicken broth when I prepared this dressing. The volume of chicken broth required will vary depending on the type of bread used, and the length of actual cooking time. My version was still a little moist (though my wife said she prefers dressing like that). I prefer dressing that is not so moist. The cook can--of course--control the moisture content by adding the volume of chicken broth that suits their preferences.
