Hash Brown Potato Casserole (from Sandy)

1 (32 ounce) package | frozen country-style hash-brown potatoes |
(Sandy thawed first & didn't use it all) | |
2-3 cups | shredded Cheddar cheese, consider Colby Jack |
2 cups | sour cream,, (1 pt) |
1 can | Cream of Mushroom Soup |
1 can | Cream of Chicken soup |
1/4 - 1/2 cup | finely chopped onion,, (Sandy used a red one) |
Salt | |
pepper to taste |
1. Preheat oven to 350 degrees.
1. Combine all ingredients in large bowl.
2. Pour into greased 13x9x2 baking dish.
3. Cover & bake for 1 1/2 hour.
(Sandy baked for an 50-60 mins, probably since it was thawed out.)
4. Uncover and place under broiler for 2 to 3 minutes to brown top.
