Gluten-free chocolate melting moments

125 g | castor sugar |
5 ml | vanilla |
2 extra-large eggs | |
300 g | gluten-free flour |
50 g | cocoa |
8 ml | BP |
3 ml | salt |
Icing | |
125 ml | butter |
5 ml | vanilla |
250 ml | icing sugar |
8 - 15 ml | boiling water |
Preheat oven to 180 deg C. Cream butter, sugar and vanilla until pale. Beat in eggs one at a time. Sift in dry ingredients and mix to form a soft dough. Shape rounded tablespoons of dough into balls. Place on a baking tray and flatten slightly with a fork dipped in cocoa powder. Bake for 20 - 25 mins and cool. Beat butter, vanilla and icing sugar until fluffy, adding a little boiling water if necessary. Sandwich biscuits with icing.
