Faux Prime Rib

3-4 lb | Top Round Roast |
1 T | Cracked Black Pepper, (freshly ground) |
½ t | Thyme |
1 T | Garlic Powder |
1 T | Onion Powder |
1 t | Coarsely Ground Salt |
¼ t | Crushed Rosemary |
Directions:
Preheat the oven to 500F (yes, 500F). While the oven is preheating, combine all of the spices in a small bowl, mixing well.
Place the roast in a casserole dish and rub it vigorously with the seasoning mix. Be sure to rub the ends with seasoning, too. Turn the roast so the side with the most fat is facing up.
Place the meat in the oven and reduce the temp to 475F. Cook for 7 minutes per pound (for a 3 lb roast, cook for 21 minutes - for a 4 lb roast cook for 28 minutes).
At the end of the appropriate cooking time, immediately TURN OFF the oven but DO NOT OPEN THE DOOR. Leave the roast in the oven for another 2-½ hours.
Do NOT open the oven door at any time until the very end or the roast will NOT cook properly. The internal temperature of the roast should be 145F when you take it out. Cover it lightly with foil and let it rest about 10 minutes before slicing it thinly.
Serve with baked potatoes and salad, or any other side dish you prefer.
