Phyllo Purses w/Goat Cheese, Chives & Lemon Zest

1/4 cup (1/2 stick) | butter |
4 oz | fresh goat cheese at room temperature |
2 tsp | finely chopped chives |
1/2 tsp | chopped lemon zest |
3 sheets | phyllo dough, thawed |
Heat butter in pan over low until melted and it bubbles, about 10 min. Remove from heat and skim away solids. Combine cheese, chives & zest in a bowl. Mash until smooth. Unfold the dough, remove a sheet, and cover the remaining with a damp towel. Lay a sheet on a flat surfaces and brush with butter. Lay a second sheet over and brush, and a third. Cut into 30 2-inch squares. Place mixture in the square & pull up the edges to form a purse. Arrange on a baking sheet and freeze for an hour. Cook at 400 degrees for 10 minutes.
