Panang Curry | |
1 1/4 lbs | chicken sliced thin |
1 large | red pepper |
1/2 jar | bamboo shoots in sesame oil |
1 can | coconut milk, (not lite) |
1 1/2 tsp. | Sugar |
1 Tbsp. | Soy sauce |
3 Tbsp. | Panang curry paste |
Fry chicken in a small amount of oil. Remove and set aside. In same pan combine coconut milk, curry, sugar, and soy sauce until smooth.
Add peppers and shoots and peppers cook 10 min.
Add chicken and heat through.
Serve over rice.
