Peanut Butter Cookie Cup

Ingredients | |
1/2 cup | butter |
3/4 cup | granulated sugar |
1/3 cup | creamy peanut butter |
1 | egg |
1/2 teaspoon | vanilla extract |
1 1/4 cup | all purpose flour |
1/2 teaspoon | baking soda |
1/4 teaspoon | salt |
24-30 mini | Reese's peanut butter cups |
Instructions
Beat butter and sugar together till creamy.
Add in peanut butter and beat again till combined.
Add egg and vanilla.
Combine flour, baking soda and salt, gradually add in flour mixture till all combined.
Roll into 1 inch balls. Place each ball into the cup of an ungreased mini muffin tin.
Bake in a preheated 350 degree oven for 12-14 minutes.
Immediately after removing muffin tin from oven press one Reese's cup into the center of each cookie. Let cool in pan for about 10 minutes before removing. Let cool completely on racks.
Notes
A few tips. Place Reese's cups in the freezer 30 minutes prior to using. If you'rte having trouble removing cookies from the muffin tin, slide a thin knife around edges then it should pop right out.
